Friends! It’s here…the weekend that is 🙂
What do you have on tap for the weekend? We have a low-key one (thank goodness!) which is much needed. Also, we are celebrating our niece’s birthday and having a new niece born in the next few days! It’s going to be a special few days.
I will leave you with some pics of me trying on warby parker glasses (if you haven’t heard of them you should check them out!) – they let you pick 5 glasses, send them to you to try on, then you send them back… all free!! Then you hopefully buy glasses from them!
Thoughts on my choices… I have to pick one! I like 1 or 3…

Friends! How are you? I’m doing okay, actually already snuggled up in bed (jeez I am an old woman.. it’s 8:05pm…) and it has been a long day. Work is getting busy and I’m just feeling blah, I think it’s the holidays, ya know, the time of year that is supposed to be so jolly. It’s stressing me out! I did get some holiday cards done for us… yay one thing done 🙂

This is from todays eats, mostly good, and let me say that I am loving holiday foods! Specially the cookies I made last night, but don’t you worry, I did share them with work!
[breakfast] trader joe’s apple chicken sausage with two eggs mixed in and some cheddar cheese, and a clementine
[lunch] hot food bar from work! I had lots of little things, including a big pile of salad, with some fixings. Then I add a bunch of protein, usually chicken, some beef, and some pork (I do little scoops of each). Lastly, I add veggies of some sort… usually works out great, as it did today! Ohhh, plus a no bake cookie!
[snack] apple and 2 clementines
[dinner] noodleless lasagna, featured on the blog last night, and two more no bake cookies. Those babies are dangerous.
So lots of veggies, fruits and whole foods… and cookies 🙂 Enjoy the holidays!
Hey friends! How is your week going? Mine is going well!
This past weekend was a bit crazy, and somewhat started unofficially on Thursday with my work holiday party, which lasted until about 1am! We have such a great group of people that events always go a bit late. The lighting on this pic was cray cray, but you get the idea (Dress from Loft).
That Friday I worked and then ran around like a crazy person trying to get ready for a white elephant party we had that night! I had to wrap gifts, go to the grocery store, make buffalo chicken dip, and shower/get ready. Well with the fiancé’s help, we did get it all done, but got the party about an hour late, which ended up being fine. It was a great party, with lots of delicious food and great company! After the house party, we headed to a bar for the rest of the night, which was a great time!
The rest of the weekend was spent seeing movies (Argo was great!), eat pho, and doing errands, etc!
Okay, onto a delicious dish I made on Sunday for dinner this week.
I started off with this recipe: http://www.chow.com/recipes/30280-noodleless-zucchini-lasagna, but had some modifications. But… this is delicious, and I don’t miss the noodles one bit!
Here is how I made the recipe:
1 jar of spaghetti sauce
1 lb of ground turkey meat
1 lb of cottage cheese
1 1/2 cups of mozzarella cheese
1 cup of parmesan cheese
1/2 of red onion chopped
1 package of cremini mushrooms sliced into 1/2 inch pieces
5 medium sized zucchini
1 lb of frozen artichokes chopped
[step 1] preheat oven to 375
[step 2] slice long strips of zucchini and place on pam sprayed cookie sheet, sprinkle with lawrys, and bake for 15 minutes, or until zucchini starts is roasted
[step 3] while the zucchini is cooking, pour in a little bit of OO and start to brown onions in a sauté pan, then add turkey meat and cook thoroughly
[step 4] add jar of spaghetti sauce to onion and turkey meat mixture, set aside
[step 5] in a large pan, sauté mushrooms in OO with s/p until soft, then set aside and cook chopped artichokes for 4-6 minutes, adding to mushrooms once done
[step 6] mix cottage cheese with parmesan cheese, and s/p
[step 7] add 1 1/2 cups of sauce mixture to mushroom/artichoke mixture
[step 8] spread the remaining turkey sauce mixture on the bottom of the pan, and add a layer of artichoke/mushroom mixture, then zucchini, a layer of cottage cheese, and sprinkle of mozzarella
[step 9] make one more layer of artichoke/mushroom mixture, zucchini, cottage cheese, mozzarella
[step 10] take the remaining zucchini and put as a layer on top, then cover with mozzarella
[step 11] bake for 40 minutes, and let it SIT for at least 30 minutes
[step 12] mangia mangia!

This is what I ate on Monday of this week, following the Sunday of cookie baking…
Pre-gym Snack: cookie (they have a lot of protein I hear…)
Breakfast: whipped banana oatmeal via kath eats recipe with peanut butter added + coffee with 1 pump caramel syrup and creamer
Lunch: Arugula salad with beets, rotisserie chicken, feta, honey, olive oil, sliced almonds + snickerdoodle cookie
Snack: mixed nuts + apple
Pre-dinner: more cookies (didn’t take pics)
Dinner: Crockpot Chicken Adobo via Table for Two + roasted zucchini
A pretty great day of eats, and I love the holiday cookies 🙂
Hi friends! How is your week going so far? Mine is going well, running around a little because we didn’t spend much time at home, but for great reasons 🙂
Spent the day working, and then had homemade pizza and hot chocolate with my main man! 🙂
Got up early Saturday and dropped off clothes at Goodwill, then made it to the post office at 930am, when they opened. Then, realized I didn’t have the box I needed, so ran home to grab it and headed back to the post office. THEN… had two people in line before me, and opened my purse to realize I didn’t have my wallet. Gave up and went home, without mailed package. Oh well!
We checked into our hotel, Hotel Monaco Alexandria, which was FANTASTIC… I was in love with this place and would love to live here 😉
I loved this black and white theme they had going on, I gained a lot of inspiration here for the future home!
Look at all they offer in case you forget anything, so helpful and nice!

After checking into the hotel, we started to walk around, and kept our eyes open for somewhere to eat. We landed at a place called Paradiso Pizzeria, and wow.. this place was so delicious! We ordered a margherita pizza and some pumpkin beers.
We continued to walk around, saw the water, then headed back up King St. (the main drag through Old Town Alexandria), and stumbled upon a coworkers recommendation, a bar called Light Horse where I tasted one of the best beers I’ve ever had, Brewery Ommegang – Three Philosophers, and enjoyed mimosa (and a few other drinks!)
After lots of drinking and SEC football watching, we headed back to the hotel to get ready for dinner at the Fish Market! Upon arriving, we promptly ordered spiced shrimp (no pic) and then ordered hush puppies (my favorite), lobster bisque, lobster rolls, and margaritas!
This was some of the best food I’ve had, it was all so amazing! I need to go back asap. Due to the heavy afternoon drinking, we actually headed to buy a six pack and take it back to the room, and then promptly proceeded to fall asleep at 10pm… but I was very well rested the next day!
After we woke up and went to grab coffee in the lobby, which also included a hot chocolate bar (ummm… awesome!), so I had some of that while I waited for fresh coffee. Then we packed up, and began our walk back to the King St metro, while looking for a breakfast spot.
We came across a place called Bittersweet, and had a delicious breakfast! I had two fried eggs over black bean patties, breakfast potatoes, an avocado mixture, and a side of bacon (of course). We also got fresh squeezed OJ, so delicious.
I loved the atmosphere of this place too! It’s definitely somewhere I would want to hang out on Sunday mornings, have coffee, and read the paper.
The rest of the day was spent hanging with my family baking a bunch of cookies (5 kinds), eating chili, and setting up the family Christmas tree.. oh and hanging with this cutie (my nephew!)
It was a great weekend, and I’m so thankful for the wonderful people in my life (fiancé + family!)
