5 Ingredient Skillet Salmon

Hi, Friends! I made this ahhhhmazing super easy 5 ingredient skillet salmon dish a few weeks ago that I have to share. Not to brag, but I could have had plates of it… I already have a hankering for it again (hankering?! Who am I??). This dish only has 5 ingredients so very easy to put together quickly. We paired it with a brown rice mixture, perfect weeknight meal.

5 Ingredient Skillet Salmon


  • 3 pieces of salmon
  • 1/2 a container of cherry tomatoes cut in half
  • 20 stalks of asparagus but into thirds
  • 1 or 2 shallots thinly sliced
  • jar of capers, liquid removed

*Assuming you have olive oil, minced garlic, s/p*


Preheat oven to 350. In a cast iron skillet over medium heat, add olive oil, minced garlic, and s/p. Then add the cherry tomatoes, asparagus, capers, and shallots, sauteing until softened slightly. In the meantime, sprinkle top and bottom of salmon with salt and pepper. Once the vegetables are softened, create space in the pan for the salmon, and place it in the pan. Put the skillet into the oven for 12-15 minutes. Remove from oven when the salmon is cooked to your liking. Plate rice mixture and serve salmon and veggies atop of it. Enjoy!

The Week of Christmas.

Hello, friends! Hope you had a great week with your loved ones. Ours was amazing and special with it being our first married Christmas.


Got up early and went to the gym. I ellipticaled (new word) which is my usual Monday-I-don’t-feel-like-working-out workout and did some reading! Reading a good book seems to make the elliptical fly by. Then I headed into work for my last working day of 2013! Once off work, I headed to the grocery store, and home to relax and bake.

Watched You’ve Got Mail because why not? Such a good classic movie, not to mention, Meg Ryan + Tom Hanks are such a good duo!

Baking | Tidbits for Today

Bake bake bake with butter & my new mixer. I love that mixer, so handy if you bake or cook a lot!

Cookies | Tidbits for Today

I baked chocolate chip peppermint cookies & sugar cookies, and both turned out really well.  I finished up the night making ziti with sausage for dinner, and hanging out with the husband.


Woke up earlyish – around 8, and went to boot camp at the gym, then ran a few last minute errands with Tim.

Christmas Eve | Tidbits for Today

We got ready for Christmas Eve dinner at BIL & SIL’s house. The meal started with spinach artichoke dip and vegetables, then the main course was gumbo, salad, and cornbread, all very delicious!


After dinner we exchanged gifts with the everyone, and had a great time watching the little kids open gifts! We got two new ornaments from my SIL and I love them!

Peppermint Bark Martinis | Tidbits for Today

We were home around 10pm and made peppermint bark martinis & watched Christmas Story on TV.


Christmas morning! We woke up + opened gifts/stockings. Tim got me a new nook for reading, shirt, a workout DVD, and some other little stuff. I got Tim a book, XL whiskey ice cub tray, brown leather gloves, and a water bottle!


Once we opened gifts, I made french toast with challah, bacon and mimosas! After hanging around, we got ready, and headed out to my parents house for the rest of the day.


We opened gifts with my family, had a roast beef dinner, and watched a movie. Perfect ending to Christmas day!  Hung out with my family, had beef dinner & dessert. Watched movie in basement then headed home.


Woke up to our couch being delivered!! BEST DAY EVER… We’ve been waiting 4 weeks without a couch, so to say we’re happy it’s here is an understatement!


A tradition we have with Tim’s grandpa is getting sushi when he is in town! We headed to a local sushi buffet for lunch with grandpa, Tim’s aunt, mom, SIL and nieces. I loooove sushi, so I thoroughly enjoyed lunch! After lunch, we headed to the mall to do some shopping. I ended up with a white Michael Kors coat at Macys, and Tim got a coat from Macys as well. The rest of the day we just hung around.



I had a good day off work, went to the gym and shopping (new chair, bar tray, and lamp!), and then got ready for a big night out with my mom and sisters!



My mom surprised all of us with tickets to the Nutcracker at the Warner Theater! She first took us to Chef Geoff’s for apps and drinks, then we headed to the theater! It was an amazing production, and such a great night with my mom and sisters!



Lazy day at home with 40 minutes of the Bethenny yoga dvd and homemade pizza of course! p.s. this pizza was insanely good! plan to post this recipe soon!


We did a lot around the house, and then got ready to celebrate Tim’s grandpas 91st birthday! We went to an amazing restaurant called Trummer’s on Main and had a wonderful meal with Tim’s family! It was great to celebrate his grandpa, and we’re so thankful to have him in our lives.

It was a great Christmas week, and now we’re ready for NYE! Hope you have a safe and fun night!

Favorite Wedding Registry Items: Towels

Favorite Wedding Registry Items

When I started looking at towels, I knew I wanted nice, soft, fluffy towels, something I’d probably not purchase for myself. I also knew, based off my sister-in-law’s advice, that I wanted white. She made a point once saying how easy white towels were to clean because bleach can be used on them, and I remembered this when I was looking through the array of colored towels.


We were registered at Macy’s, Bed, Bath & Beyond, and William Sonoma, so I looked at their towels to start, and Macy’s had a wide selection that I liked. As I shared before, I did all of my registry online, so I based my selections heavily off reviews of which towels seemed the best.  I usually look for 4 stars and above, and I’ve used the Hotel Collection brand before, so I went ahead and went with it.


Thankfully, we did receive our full towel set, and… we love them! They are so soft, and shall I say, comforting?! I’m very glad with the choice we picked! How many of what kind did we register for… here’s what we got, and this I completely just guessed with:


Overall, this amount has worked well. If I would add anything, it might be more washcloths, if you use them to wash your face daily.

So… I think that covers towels. Did I miss anything?

What Makes Me Smile.

Hello to you all! How was your weekend? Mine was pretty good, lots of family and friends so no complaints here 🙂



Life lately has been good, lots of wedding stuff.. <<rant start.>> I’ve come to realize that weddings are not about ‘us’… there is so much to worry about re: other people… it’s becoming annoying honestly. Isn’t this day supposed to be about us, yet i feel like I’m always worrying about other people’s feelings. It leaves me feeling like other people are selfish, it’s discouraging. <<rant over.>>

Hi there and Happy New Year to you! I know I’m a tad bit late on that, but better late than never 😉

HOpe your new year is going smashingly! Mine has so far. Let’s get into what I ate yesterday.

[breakfast] two eggs fried over arugula with two pieces of turkey bacon, grapefruit, and coffee. (side note: if you haven’t tried runny eggs over arugula, please do. it’s amazeballs)


[lunch] mixed greens, rotisserie chicken, goat cheese, tomatoes, avocado, with a homemade honey dijon dressing.

SO! that’s what I had to eat yesterday… it was a great day of foods, in my opinion.

Wedding: The Engagement

So I realized I haven’t shared much about our engagement/wedding! I’d love to share because we are having a fun time trying to plan the wedding while maintaining a budget 😉 I’m going to start with the engagement!

So I knew TP was up to something around Valentines Day of 2012 when he asked about what kind of rings I liked. I gave him a detailed email describing them lol 🙂 Not really, but I did provide some suggestions as to what styles I liked, which he says he appreciated!

After valentines day, it was on my mind, but I figured he was working on it, so I kept calm and enjoyed life together! We had a lot of things coming up including the beach, and my 25th birthday, but didn’t want to get my hopes up, so I was proud of myself for maintaining the ‘enjoying life’ goal… 🙂

Both the beach and my birthday passed, with no engagement, however we had an amazing time at both the beach and my birthday!


A week after my birthday, in early August, TP came home from a business trip, and was in our bedroom unpacking. I was hanging on the couch in yoga pants and sweatshirt, per typical! He asked me to come into the bedroom because he had a souvenir for me, to which I was really skeptical, and honestly was not even thinking of the engagement. I walked into the bedroom and he was on his knee holding the ring, and said a lot of great things that I can’t remember (so wish I remembered), and I just was in shock! It was a complete surprise and so perfect that we were in our apartment that had helped us grow so much as a couple.

The ring is absolutely stunning, and I feel so lucky and blessed that I get to marry him!


Now we are deep in the wedding planning phase 😉

I saw this survey on Tina and Brooke’s blogs and while the BF watchs a TV show I’m uninterested in, I’m going to do this!

1) What is one of your favorite ways to spend a Saturday?

Wake up late and have waffles/coffee for breakfast, run errands, enjoy some lunch (usually leftovers), workout, eat out dinner with the BF and go out with friends for some drinks.

2) List your top three favorite TV shows.

Top Chef, Revenge, Grey’s

3) Would you rather be in pictures or take them?

Be in them, only because I’m so lazy about actually snapping pics, unless it’s on my phone using the retro camera app for the Droid.

4) Why do you blog?

I love that it is a space I can speak freely about my life, and use a really casual tone. Plus, I’ve started to see the great community that it has, and I’m always looking for people who have the same interests/goals as me regarding nutrition, running, and life in general.

6) If you could have lunch with one person from your Twitter list who would it be?

Jillian Michaels – I’d love to workout with her!

Droid, water bottle, my BF’s big comfy hoodie that I stole (I could wear this thing 24.7)

Water, Dr. Pepper (which is rare to drink but sooo good when I do), or red wine

11) Do you enjoy cooking?

Yes!! Love it 🙂 I wish I had more time to devout to it, but I try to cook dinner a few nights a week, and the BF helps out during the weekend!

running, reading, cooking, lounging with my man, being with my family/friends, eating out, organizing

14) Would you consider yourself to be shy or outgoing?

Shy initially, but then outgoing once I know someone.

Hmmm, I’d love to say nothing, but that’d be a lie. I would make my lower half smaller! But I really could care less, that would just be if I HAD to change something.

17) What’s the coolest thing you’ve done this week?

Today I went to a Chinese hotpot place called Mala Tang for lunch that was very neat and fun!! It was essentially like melting pot, but you have your own individual pot of broth, I loved it because it was pretty healthy, just veggies and meat. How it works is they serve up veggies and meat family style,you take what you want and put into your pot, cook in the boiling broth, and eat!


18) Do you live near your family or far from them?

They live near me, about 30 minutes! I love being near my family, especially because my big sister is pregnant!!

19) List three of your talents.

Creative, funny, kind

20) What is your greatest attribute?

Being a comforter, if someone is in a tough spot, I’m always willing to listen or do whatever I can to help!
