Quick and Easy Breakfast: Sausage, Pepper, & Onion Quiche

I’ve been on a big quiche kick since having our first baby. They are such a quick and easy breakfast, and quickly are reheated. The perfect solution when time is off the essence with a new baby 🙂

Ingredients:

– prepared pie crusts

– roll of uncooked breakfast sausage

– 1 white onion chopped*

– 1 green pepper chopped*

– 6 eggs

– 1/2 cup half & half

– 1 cup cheddar cheese

– salt & pepper

Directions:

1. defrost 1 pie crust and put into pie pan

2. brown sausage over medium heat until fully cooked

3. put cooked sausage, onion, pepper, and cheese into pie pan

4. thoroughly whisk or blend mix eggs, half & half, and salt/pepper

5. pour egg mixture over ingredients in pie pan, making sure to it is covered (if not fully covered, whisk up 1 or 2 more eggs)

6. Bake at 350 for 45-60 minutes, the top of the quiche should be golden and the center should be firm

7. Let cool for 5-10 minutes and enjoy! (you can also store in the fridge to eat throughout the week like we do)

* Our grocery store sells frozen pre-chopped peppers and onions, a good time saver!

    I love quiche, but for some reason I haven’t made it in ages. Thanks for inspiring me to make one, and your recipe sounds wonderful! And yes, quiche keeps wonderfully for leftovers…I actually like to eat it cold right out of the fridge!
