Good morning and happy Wednesday! Is it just me or is this week going soooo slow? But on the other hand, 3 day weekend coming up! 🙂
I’m excited to share what I’ve been eating, you’ll notice that some things have changed while others are still the same!

[breakfast] coffee with cream/sugar, grapefruit, 2 eggs over the baby spinach blend, and three pieces of turkey bacon
[pre-lunch snack] 2 clementines
[lunch] went to a restaurant called Honey Pig, essentially Korean BBQ. We shared beef brisket and pork belly, along with rice, salad, and some other sides.
[after-lunch dessert] some dark chocolate (this brand is really good!)
[afternoon snack] 1.5 PB Amazeballs via Gina @ The Fitnessista and some potato chips (unpictured)
[dinner] leftover salad scooped up from work, which had mixed greens, cranberries, blue cheese, pumpkin seeds, almonds, walnuts, and balsamic dressing. Also had a little bit of pasta with meat sauce and zucchini
[dessert] powerballs from Trader Joe’s <— these little babies are dangerous!
A good day of eats, and it was fun to try a new restaurant/style of food! Oh, and this is from yesterday 🙂

Friends! How are you? I’m doing okay, actually already snuggled up in bed (jeez I am an old woman.. it’s 8:05pm…) and it has been a long day. Work is getting busy and I’m just feeling blah, I think it’s the holidays, ya know, the time of year that is supposed to be so jolly. It’s stressing me out! I did get some holiday cards done for us… yay one thing done 🙂

This is from todays eats, mostly good, and let me say that I am loving holiday foods! Specially the cookies I made last night, but don’t you worry, I did share them with work!
[breakfast] trader joe’s apple chicken sausage with two eggs mixed in and some cheddar cheese, and a clementine
[lunch] hot food bar from work! I had lots of little things, including a big pile of salad, with some fixings. Then I add a bunch of protein, usually chicken, some beef, and some pork (I do little scoops of each). Lastly, I add veggies of some sort… usually works out great, as it did today! Ohhh, plus a no bake cookie!
[snack] apple and 2 clementines
[dinner] noodleless lasagna, featured on the blog last night, and two more no bake cookies. Those babies are dangerous.
So lots of veggies, fruits and whole foods… and cookies 🙂 Enjoy the holidays!

This is what I ate on Monday of this week, following the Sunday of cookie baking…
Pre-gym Snack: cookie (they have a lot of protein I hear…)
Breakfast: whipped banana oatmeal via kath eats recipe with peanut butter added + coffee with 1 pump caramel syrup and creamer
Lunch: Arugula salad with beets, rotisserie chicken, feta, honey, olive oil, sliced almonds + snickerdoodle cookie
Snack: mixed nuts + apple
Pre-dinner: more cookies (didn’t take pics)
Dinner: Crockpot Chicken Adobo via Table for Two + roasted zucchini
A pretty great day of eats, and I love the holiday cookies 🙂

Breakfast: 2 eggs, 2 pieces of turkey bacon, toast
Lunch: Chipotle chicken salad on lettuce with avocado and Mexican cheese (not pictured: peanut brittle, a few tootsie rolls).
Snack: A packet of apples and cinnamon oatmeal with a sliced apple, and crumbs of peanut brittle
Dinner + Dessert: Leftover pasta e fagioli and leftover pecan bars
What tasty treats did you eat this week? I can’t get enough of the pecan bars!

All meals are from Tuesday (Election Day), and the only thing missing is a handful of candy I had at work! (Dear parents, please leave your children’s candy at home, so we can maintain our good eating habits while at work 😉 )
Breakfast was coffee with coconut creamer and sugar, 2.5 pieces of turkey bacon, and 2 eggs with a sprinkle of cheese.
Lunch included Chipotle Chicken Salad and tootsie rolls! We keep tootsie rolls at work, and they are pretty low on the weight watchers points, so I typically have some after lunch.
My snack was apple slices.
Dinner was leftovers from last week of Santa Fe Chicken Casserole, wine, and leftover acorn squash with a small slab of butter and brown sugar.

So here is what I had today to eat, however, a few things are missing: half of the eggs and 2 pieces of turkey bacon, 4-5 chocolate covered pretzels, a few pieces of pita chips, an apple, and a yogurt.
note to self: don’t come home and start making dinner while absolutely starving, you will eat chocolate covered pretzels ;D
Anywho! Here we go:
breakfast: egg whites with ketchup; 3 pieces of turkey bacon
lunch: roast beef wrap with lettuce, avocado, and mustard; Dannon Pure yogurt [so good]; chocolate covered pretzels
dinner: chicken fajitas; onions and peppers; avocado; cheese; lettuce

I’m recapping what I ate yesterday (Tuesday), which was a little bit on the sweet side… (sorry the pictures aren’t in the exact order, use the numbers to follow 😉
1. 2 eggs + banana + almond butter
2. TJ’s jalapeno sausage + roasted broccoli/brussels sprouts
3. vanilla cake + chocolate frosting (my favorite in life)
4. Beef stick + rainbow trail mix from TJ’s
6. Veggie/bacon whole wheat pizza
Ok, off to work for this kid!! Have a lovely Wednesday!
Today’s eats were pretty typical, and looking back they don’t even look like a lot… I swear that at 4pm everyday I get hungry, regardless of the fact that I had a snack at 3pm!
I realllly could have gone for some ice cream, but we don’t have any and I’m too lazy to trek to the store!
